Don’t tell the kids there are chick peas in these bars and they will never know. These are a great high protein fuel for days when you need that little extra energy.
INGREDIENTS
1 can chickpeas rinsed and drained
320g Sweeter Bananas (approx 4 bananas)
½ cup coconut
½ cup quick oats
½ cup olive oil
½ cup brown sugar
1 tsp baking powder
½ tsp salt
80g carob roughly chopped
1 extra banana sliced lengthways
1 tbsp honey
METHOD

Place all ingredients excluding the carob into a food processor and whizz until smooth.

Pour into a square 20cm cake tin.

Dot evenly with carob then top with the three bananas.

Drizzle the bananas with a little honey.

Bake at 180 degrees celsius for 40mins.

When it is ready it will start to become golden, particularly around the edges, and the edges will begin to pull away from the tin.

Leave to cool in the tin for at least 10mins before turning out on a rack to finish cooling.
